True luxury requires patience. Created in collaboration with Bordeaux Distilling, Noble Rot is a gin that begins where others end. We start with select Semillon and Sauvignon Blanc grapes from the misty vineyards of Sauternes, harvested only after the arrival of Botrytis cinerea, the Noble Rot.

This benevolent decay withers the grape, concentrating the sugars and flavors into a nectar of unparalleled complexity. We do not just distill gin. We harvest the soul of the vineyard.

Unlike traditional heat-only distillation which can strip delicate aromas, Noble Rot undergoes a proprietary Fractional Freezing process. By chilling the spirit to extreme sub-zero temperatures, we freeze out the water, leaving behind only the heart of the heart, a viscous, flavor-dense spirit rich with the honeyed notes of Sauternes and the crisp snap of juniper.
